Yippeee! I quit my job in the ER last week and I am lovin' life. Home with the kids for the summer and just where I want to be. I mean really, is there any better way I could spend my time. Today (Monday) is house blessing day. (Blessing, not cleaning, thank you Flylady). The kids had a job relay in teams boys vs. girls. with a grand prize of a gelata from Zeppe's. Holy Batmobile. They were frantic. I don't think they have ever worked that hard or fast. And now all out to play while the baby takes a nap and I have a few precious minutes to myself.

Taco Soup
( A good ol' recipie that starts with ground beef and an onion)
1lb ground beef, or chicken
1 chopped up onion
1 tsp chopped garlic
1 large can Vegetable Juice (like V8)
1 pint bottled tomatos with juice
1 can chicken broth
1 can of kidney beans
1 pkg taco seasoning
1 cup corn (frozen or canned)
Toppings, sour cream, grated cheese, tortilla chips, chives
Brown ground beef, onion and garlic. In large pot combine beef, onion, garlic, vegetable juice, tomatos, kidney beans, chicken broth and taco seasoning. Bring to a simmer add corn and simmer again. Serve hot with desired toppings. Enjoy!
